biggest bread ever, this bread weighed in at two pounds per loaf, I had to split open the bags to fit it in, using two bags taped together to wrap it up! I have never seen such massive bread, maybe it was the effect of the humidity or something? It is the same recipe I use all the time…

The Shapeshifters 2012 The Ultimate Mix

No Fail Fifty Percent Whole Wheat Bread Recipe
4 cups warm water
1/2 cup brown sugar
3 T honey
1 1/2 cup oil
mix together the above, and add to:
6 cups whole wheat flour
6 cups white flour
4 T yeast
3 T salt
couple handfuls pepitas
1/3 cup flax seed
1/3 cup sesame seed
Mix in a really big bowl, turn out onto a floured board, knead until smooth in texture, about 10 or 15 minutes. The dough should be kind of springy and not sticking to the board when kneading is done. Oil the sides of the bowl, put the dough back in and roll it around in the bowl to oil the ball of dough on all sides. Cover with a tea towel, dust a little four on top of the dough so it doesn’t stick to the towel. Let rise for one hour, punch down the dough, form into 3 or 4 loaves according to the size of your breadpans. To prevent bubbles in your loaves, give ’em a good spank as you shape them. Oil the pans generously, and once again, dust the loaves with a little flour, and cover with a tea towel. Let rise for one hour, then bake in a pre-heated oven at 325 degrees F. Takes about 45 minutes. Loaves are done when crusty on top, and sound hollow when you tap them. The loaf will be slightly drawn away from the edge of the pan, and should come out easily. Place the loaves on a cooling rack when they come out of the pans to keep them crusty on the sides.
My friend Forest from S.T.A.N.D,(Sustainable Tropical Agriculture and Development), told me that when a woman kneads bread, her hormones go into the dough and make the bread better. Kinda sexy, huh? Our kitchen is overflowing with goodies so we’re prepared to bring our best offerings to market.  This is our second trip to the market as entrepreneurs, last time, the bread sold before we even set up and this time, the bread looks even better!  We also did remarkable on our kombucha sales, selling over ten bottles!   So we’re in a good position to best our efforts.  Hope you enjoy!

Healing Wonders

Belize is a natural choice for a vacation for sick Westerners;  where else can you get off the beaten track, enjoy pristine nature and still speak your native language?

Belize hasn’t begun  to regulate it’s natural healers here, so you can find herbs, shamans, and healers of all descriptions ready to teach you the healing secrets of their arts.

You might wonder if you should get vaccinated before coming to Belize; our answer is an emphatic NO!  Vaccines are full of the worst garbage they can put in you, and the cure to whatever ails you can be found less then a square mile from where ever you are in Belize; I’m not kidding you!

The fresh air might heal you as soon as you step off the plane.  It started working on me immediately.

Salt water is nice.  Great for healing sores.  But for a deep spiritual cleanse you’ll have to try and find a fresh water sinote, or a fresh stream to swim in.  Or a waterfall.  Every day that we swim in the falls of Cristo Rey we are gladdened to our essence.  Fresh water can be so relieving.

The fresh fruits of the market are unlike anything you have ever tried in the supermarkets of the West.  They are so fresh!  Cayo is the local produce capital of Belize.  Right now, until April/May, many fruits are in season, the likes of which you haven’t tried before.  Custard apples- these are like strawberry yogurt.  Star apples; we call these Jello balls.  Mangos; so many different varieties and flavours!  And try the local Bananas!

The Sun is so soothing these days.  If you are on the coast, by all means, cover up!  But if you can find a nice secluded place; like we have at the Chaya Garden Ashram; then it’s time for a Sun Bath!   Our bodies soak in the energy from the Sun, much the same as plants do.

And the people of Belize are going to win your heart.  They love their music, and it’s always flowing in the breeze.   And speaking of the Breeze, there’s nothing like that 5:15 breeze that comes to cool us off after a hot day.

Actually, that is my recipe for good health; and here it is in short form: Fresh air, fresh water, fresh fruits and veggies, Sun, and music in the breeze.

 

Relax and Renew, Yoga, Massage, and Vegetarian Menu in Belize

Chaya Garden Ashram is a beautiful place, an absolute gem to discover.   It is the place we would love to spend the rest of our lives.  Nestled in the jungle AND close to town, anyone visiting San Ignacio, Belize who is interested in Yoga, natural healing, swimming, birds, and R&R should come for a visit.
There is nothing so refreshing as a swim in a fresh water spring when you are dripping sweat, just from spending the morning in town! One dip might be enough to keep you refreshed all day long!  But the waterfalls are right there, so we spend the whole day going into and out of the water.
After your swim, treat yourself and receive a massage from the healing hands of Laine Hoogstraten. Just this morning I was feeling like I was falling apart from the vigorous kundalini yoga class we partook at 8am. In only half an hour of massage, and a little rest afterward, I was ready to take on the world again!  Laine speaks the language of energy with your body, listening and learning about subtle energies.  It is how she earned herself the name “Laine Hand-singer”.

I know the impetuous is to go out there in Belize and see every mayan ruin you can and see as much of this amazing and vibrant country, but let me give you a word of advice; “GO SLOW!”  However you can make a day of seeing 3 different ruins in Cayo District!
We can also prepare you a vegetarian meal, with local vegetables, salads, smoothies, soups, you name it. We are well acquainted with the variety of available fruits and veggies, and know what to do with them. All to be had for a reasonable cost.
